There is one more type of potatoes that is rather very eye-catching. This type is the red potatoes. If you visit a farmers market, or a fresh vegetable aisle of any grocery store, your eyes might have landed on the red potatoes. Here is everything you need to know about these potatoes:

As for the size is concerned, they range from small to medium. The shape is quite oval and is uniform. The red skin is smooth, along with brown spots or speckles.
- Internal: When you cut a red potato, the contrast is quite unique. Unlike the red exterior, the interior is white, crisp, and firm.
- Flavor: It is not just the appearance that is unique, but the flavor as well. Red potatoes have a mild flavor. Furthermore, they have an earthy and buttery flavor which everyone loves.
- Texture: As for the texture, it is quite waxy and dense. That’s because they have a high starch content.

Red skin mashed potatoes recipe
Red skin mashed potatoes don’t require expensive or elaborate ingredients. The ingredients are pretty simple and readily available at every vegan grocery store. Here is a detailed breakdown of everything you need:
- Red skin potatoes: because this is a skin on mashed potato recipe, we are going to use red skin potatoes. That’s because the skin is delicate and is easy to eat. Furthermore, the flesh inside is also fluffy and dense when cooked, i.e., perfect for mashed potatoes.
- Vegan butter: No mashed potato recipe is complete without butter. And because it is a vegan recipe, of course, we are going to use vegan butter. It helps to make the mashed potatoes buttery and tasteful.
- Vegan cream cheese: It is another ingredient that adds creaminess and cheesiness to the mashed potatoes. You can use any branded cream cheese, but make sure it is vegan.
- Non-dairy milk: Milk is an important ingredient in mashed potatoes. And because when you are making a vegan dish, the perfect substitute for dairy milk is plant-based milk. You can use any non-dairy milk. I personally like coconut milk. That’s because it is dense and brings additional creaminess to the mashed potatoes. Make sure you are using unsweetened and non-flavored non-dairy milk.
- Seasoning: Plain salt is enough to add flavors to the mashed potatoes. However, you can add any additional herbs you like as well.
How to make red skin mashed potatoes?
Making red skin mashed potatoes is very easy. Here are a few simple steps you have to follow:
Step 1: The first step is to wash and scrub the red potatoes to get rid of dirt. Because the potatoes grow underground, they usually have a lot of dirt on them. So, you really do need to take some time to scrub them.
Step 2: Next, place them in a pot and pour water on them. Fill the pot with water so that the potatoes are submerged in it.
Step 3: Place the pot on medium heat and bring it to a boil. Let the potatoes simmer for about 20 minutes, or until they are cooked. You can check them by inserting a fork or knife into them. They should not feel very hard, the fork or knife should insert easily.
Step 4: Once they are done, take them out of the water and place them in a large bowl.
Step 5: Add vegan milk, vegan cream cheese, vegan butter, salt, and mash using a fork or potato masher. Because it is a skin-on recipe, you don’t need to peel the potatoes!
Step 6: Once everything is well combined, serve immediately.
How to fix runny mashed potatoes?
If the mashed potatoes turn out to be runny, it can cause a serious problem. The perfect mashed potatoes have a balanced consistency which is nowhere near runny. However, if you encounter this problem, you don’t have to worry. You can fix the issue and adjust the consistency by adding more vegan cream cheese.
However, the best way to avoid this problem is by adding the milk slowly, so you can only add as much as you need.
How to store mashed potatoes?
You can store the leftover mashed potatoes by placing them in an air-tight container and storing them in the refrigerator. It will stay good for up to 3 days. You can reheat the mashed potatoes in the microwave or on the stovetop.
Can you freeze mashed potatoes?
Yes, you can freeze mashed potatoes. Once they are cool, place them in a zip lock bag and place them in the freezer. It will stay fresh for up to a month.
When reheating, simply take it out of the freezer, place it in a saucepan and reheat it on the stovetop. Don’t forget to stir for even reheating. Furthermore, you can also reheat it in the microwave. Place it in a microwave-safe container and microwave it for 5 minutes.
