Vegan Strawberry Ice Cream
I don’t think there is anything more summery than a nice refreshing scoop of creamy vegan strawberry ice cream. There is quite a selection of vegan ice cream options available now, but of course, nothing tastes better than homemade.
In the summer, I regularly make vegan ice cream with my ice cream maker, but sometimes I don’t want to deal with the hassle. Plus, the bowl requires freezing for at least a day in advance, and it takes up space in my freezer so I rarely leave it in there. Basically, I would have to plan ahead. Vegan Strawberry Ice Cream
Don’t get me wrong, I love to enjoy the benefits of modern kitchen appliances. In this busy world, they help to save time and sometimes they produce finer results. Well, my ice cream machine wasn’t accessible, like when I made my Coconut Cherry Ice Cream, so I had to improvise in making this delicious strawberry ice cream.
How did I go about getting such creamy results? Well, the answer is the ingredients, combined with patience and love. It took me around 4 hours to get this result and my son kept asking for ice cream. Is this worth the work? Oh yes!
Nothing like putting your blood, sweat, and tears in what you love. The result was a yummy smooth dairy-free ice cream with a perfect blend of coconut and strawberry.
Coconut Milk Nutrition
Coconut milk is made from the inner meat of mature coconuts. It is a delicious milk substitute that is used traditionally in many cultures, especially in the Caribbean, Asia, and South America.
Coconut milk has quite a high but healthy fat content, making it perfect for adding to spicy dishes to mellow the flavor and as a base for desserts. Coconut milk is also full of various minerals and vitamins, antioxidants, and even some fiber and protein.
Note that people with allergies to tree nuts can consume coconut because botanically coconut is not a nut, it is a fruit. However, the FDA (Food and Drug Administration) has classified it as a nut. Coconut Cream vs Coconut Milk
Coconut milk is made with coconut meat and water and is a similar consistency to cow’s milk and similar non-dairy milk substitutes. It works great in smoothies, desserts, and curries.
Coconut cream is made from skimming the top protein and fat layer from simmered coconut milk. As such, it is obviously creamier and thicker and is used as a whipped cream substitute, also in desserts, and any recipe where you require this thicker consistency and higher fat content. Read More Here.

I absolutely love cashews, and so do most vegans if I’m being honest. The reason why cashews are found in the majority of any vegan pantry is that they make the creamiest and smoothest sauces or bases, but they are also nutritionally dense.

Bananas have many health benefits and can be consumed for breakfast, lunch, or dinner. Some of the nutrients contained in bananas are potassium, vitamin C, vitamin B6, magnesium, copper, fiber, and protein.
Eating bananas is also a good way to maintain blood sugar levels, aid with digestion, help to maintain heart health, assist with weight loss, and are easy to include in your diet.
Bananas are also very filling and will prevent you from feeling hungry for several hours. This will significantly assist those who are formulating weight loss plans. In addition, a medium banana contains only 102 calories.
Bananas also contain bioactive plant compounds such as dopamine and catechin. The dopamine which comes from bananas acts as an antioxidant and the catechin can assist with reducing the risk of heart disease.

- Coconut Milk
- Raw Cashews
- Strawberries
- Maple Syrup
- Frozen Bananas
- Vanilla Extract
How To Make Vegan Strawberry Ice Cream?
To make this Strawberry Ice Cream No Churn method:
- Place the cashews and coconut milk in the blender, and process until very smooth. Add the strawberries, maple syrup, banana, and vanilla. Continue blending until the mixture is smooth and creamy.
- Pour the ice cream mixture into a parchment-lined loaf pan, or covered freezer-friendly container. Cover the container with plastic wrap or its lid and freeze for about 4 hours. Remove the ice cream from the freezer for about 20 minutes before serving.
My vegan strawberry ice cream with coconut milk is perfect for those who are lactose intolerant or have dairy allergies and are missing the creamy texture of ice cream.
It is also great because you get to choose your own ingredients, and eliminate questionable ingredients such as preservatives, high fructose corn syrup, and artificial coloring.

- 1/2 cup raw cashews
- 2 cups strawberries tops removed
- 1/4 cup plus 2 tablespoons maple syrup
- 1 medium frozen banana
- 1/2 teaspoon vanilla
