If you are a health enthusiast, you would be looking for several healthy breakfast options. And honestly, the list is never-ending. However, people who follow a gluten-free and vegan diet seem to find themselves at a loss when searching for tasteful and interesting healthy recipes.

So, to help you out, I am going to share a delicious gluten-free apple muffin recipe. Yes, that’s right. A vegan, gluten-free, sugar-free, and oil-free recipe to kick start your day.

Use it for breakfast, or snacks, it is a perfectly healthy and tasteful recipe that will make you fall in love with it. And the best part is, it is easy to make as well. a few right ingredients, a few right steps and that’s where the magic will happen.

As I said, it is the perfect way to start the day. I actually made two batches today, one for breakfast and one for supper. These Gluten-Free Apple Muffins have just the right amount of apple flavor and sweetness with coconut sugar in them. Topped with a crumbly streusel topping, they are perfect for packed lunches and a quick snack.

Like my Blueberry Muffins, Hummingbird Muffins, and Pumpkin Muffins.. these muffins are flavorful, moist, and fluffy.

Now, before we get to the recipe, here is a quick understanding of the recipe and its ingredients.

What is a muffin?

Ever seen an over-sized, mushroom-like cupcake? That’s the muffin. A muffin is quite different from a cupcake. Firstly, it doesn’t have frosting on top, and secondly, well, it doesn’t look as sophisticated as a cupcake.

It is big and when baking, it is preferred that it rises and overflows from the tray almost giving it a mushroom-like appearance.

Because of its size, it is fulfilling. And the best thing is, you can make muffins using different flavors, and fruits. From plain vanilla muffins to delicious apple and pumpkin muffins, the sky is the limit.

It is all about the texture. A muffin has a different texture from a cupcake and a cake. because of its pillowy, and soft texture, it has a place of its own.

Are muffins healthy?

Well, it is a tricky question. If you are getting a muffin from a bakery, it will have sugar, fats, and ingredients which won’t qualify a muffin to be a healthy option.

‘But hey! Who needs a bakery-made muffin when you can make some of your own? You can choose substitutes and turn them into a healthy masterpiece. For instance, if you want to stay low on sugar, use honey, it is a perfect alternative.

However, if you are looking for a vegan recipe, that’s a totally different story. Being vegan doesn’t mean you can’t enjoy the goodness and luxury of Healthy Apple Muffins. By choosing the right ingredients you can make gluten-free, healthy, and delicious apply muffins at home.

Well, if you are looking for a gluten-free, vegan, sugar-free, and oil-free Apple Muffin recipe, you won’t find a recipe better than this. It simply ticks all the boxes. The choice of ingredients is unique and carefully though. So, you can follow it with your eyes closed.

These Vegan Apple Muffins are hearty and fulfilling. They are also high in fiber so a perfect way to energize you for the rest of the day. And they have apples in them! Remember what they say about apples? An apple a day keeps the doctor away!

What does gluten-free mean?

Gluten is an important component of many ingredients. Although it is a naturally occurring compound, not everyone can digest it.

Some people are allergic to gluten, and therefore, they require a gluten-free diet. Furthermore, many people choose to follow a gluten-free diet to improve their health, reduce weight, or increase energy levels.

Whatever the reasons are, a gluten-free diet is also a healthy diet. You can find several gluten-free ingredients in the gluten-free section of a grocery store.

Which apples to use?


Apple comes in so many different varieties, flavors, and colors. It really doesn’t matter which apple you use in muffins. The only difference it will make will be that of the texture or sweetness.

I use Fuji apples for my gluten-free apple muffins. I love its juiciness, texture, and sweetness. It is perfect for my taste. However, you can try different varieties of apples to check which suits your tastebuds the best.

Some of the most widely used apples for this purpose are Granny Smith apples and Golden apples.

How To Make Gluten-Free Apple Muffins?


Making Vegan Apple Muffins is a piece of make. To make these apple muffins, I chose a sweet crisp apple, my favorite is Fuji apples,

Peel and dice the apples, and set them aside.

Prepare the streusel topping by mixing coconut sugar, almond meal, and cardamom or cinnamon in a small bowl and set aside.

Combine the dry ingredients, I used a combination of gluten-free rolled oats and brown rice flour from Amazon.

Make sure the roll oats are certified gluten-free if you are gluten intolerant or have celiac disease to avoid cross-contamination of gluten found in regular oats. Ground flaxseed is added as an egg replacer.

Combine wet ingredients, almond milk, ripe banana, and vanilla. The banana taste is not overpouring, it is very subtle that you won’t even notice.

Mix wet ingredients into dry ingredients, fold in diced apples, and scoop batter into a prepared muffin pan. Sprinkle the top of muffins with the streusel mix.

Pro baking tips


Here are a few tips that will ensure you bake perfect muffins like a pro:

  • Before you measure flour, make sure it is free from lumps. You can pass it through a sieve and that add it into the measuring cup with a spoon. Also, once the measuring cup is full, give it a tap and level the top using a knife.
  • Most people think baking powder and baking soda are the same things. It is not! So, make sure you read the recipe carefully so you won’t confuse baking powder with baking soda. I use baking powder for my healthy apple muffins.
  • The way you mix and stir the batter will affect the softness of your final product. So, instead of mixing vigorously to save time, keep your hands light. Mixing the batter and folding in apples through gentle hand movements will result in soft, moist, and fluffy muffins.
  • When spooning the batter onto the muffin tray, fill it 3/4th This will give the muffins space to rise evenly without getting messy. You will get a beautiful mushroom-shaped muffin in the end.

Gluten-Free Apple Muffins

These Gluten-Free Apple Muffins are the perfect breakfast muffin, filled with delicious bite-size pieces of apples. They are gluten-free, vegan, sugar-free, and oil-free. They are hearty and filling, high in fiber so they are very good for you. The perfect way to start the day.

  • 1 medium apple peeled, cored, finely diced and set aside (I used Fuji apple)

Streusel Topping

  • 1/4 cup almond meal or flour
  • 2 tablespoons coconut sugar or organic cane sugar
  • 1/2 teaspoon ground cinnamon or a pinch of cardamom

For The Muffins

  • 1 cup brown rice flour
  • 1/2 cup Gluten-Free Rolled Oats
  • 1/2 cup almond meal or flour
  • 3/4 cup coconut sugar
  • 2 tablespoons ground flaxseeds
  • 1 tablespoon baking powder
  • 1/4 teaspoon sea salt
  • 1 cup almond milk
  • 1 medium ripe banana peeled and mashed
  • 1 1/2 teaspoons vanilla


  • Preheat oven to 350°F and line the muffin pan with liners.
  • Peel the apples, remove the core, and dice them. You can also shred the apples, but I love their texture after dicing them. Set aside in a medium bowl.
  • To prepare streusel topping, mix almond meal or flour, coconut sugar, and cinnamon in a bowl and set aside.
  • In a large bowl, add brown rice flour, rolled oats, almond meal, coconut sugar, flaxseed meal, baking powder, and sea salt.
  • In another bowl, mix the almond milk, banana, and vanilla.
  • Stir into the dry mixture and combine well; I used a wire whisk.
  • Fold in apple pieces gently.
  • Spoon batter into muffin liners evenly. Combine topping in a small bowl and sprinkle on top of muffin batters.
  • Bake for 30 minutes or until a fork inserted comes out clean. Transfer to a cooling rack and allow to cool for 5 minutes.
