Egg Fruit (Canistel)
What is Egg Fruit or Canistel?
Eggfruit, an orange-yellow bright fruit, is quite distinctive because of its smooth and definite surface, and the name is obtained from its similarity in texture to a hard-boiled egg yolk.
Canistel is another name for the egg fruit. They are closely related to a popular fruit, Sapodilla or sapota, a tropical fruit. In fact, egg fruits are also designated as yellow sapote or various names in different world regions.
Currently, egg fruits are mostly grown in Central America, Southern Mexico, and the Caribbean. In order to shield the skin of egg fruit as it is quite delicate, the fruit needs to be harvested using hands.
In the regions mentioned above, they are appreciated for their ripening time, mostly in winter or late fall. Therefore, egg fruits are available in such seasons in which previously there is very restricted accessibility of fruits.

What does egg fruit taste like?
It has a very sugary but neutral flavor with elusive notes of mango, pumpkin, sweet potato, and some other tropical fruits. The egg fruit’s flesh carries hard, blackish-brown seeds about one to four in total that releases a noticeable squash-like or musky scent.
Which fruit is known as egg fruit?
Canistel fruits are another name for egg fruits and are closely related to sapodilla or sapota, a tropical fruit.
How do you know when a Canistel fruit is fully ripe?
Canistel continues to ripen off the tree at room temperature until it ripens fully. Whenever the egg fruit is harvested, the egg fruit will start to ripen for 3-10 days. In the process, it will turn from green to gold.
Even when the egg fruits are not fully ripened, it might still show a golden sheen. To avoid this confusion, one of the significant indicators is that you can see the gloss and the certain texture of the egg fruit that will help you know that it is riped entirely or not.
Once it is fully ripened, it should be eaten or refrigerated as soon as possible. The pulp can also be combined with the sugar and frozen for six months.
