To make this stew, you can use any type of potatoes you have on hand: red, golden, russet, or whatever. I wouldn’t use sweet potatoes here because I think it would take the meal in a very other direction.

This potato stew is quite simple and easy to prepare. This stew will come in less than half an hour in your bowl. You’ll just require the following ingredients and steps to follow:
Ingredients
- Potatoes – any potato is good for this recipe, I used organic red-skinned potatoes, you don’t have to peel, just scrub the potatoes and chop them.
- Avocado – or olive oil is perfect or you can make the recipe oil-free by using vegetable broth or water to saute your veggies.
- Onion – give lots of flavors to your stew, yellow or white onion is fine.
- Garlic – important for flavor, if you are a garlic lover, then add up to 5 cloves.
- Green onions – boost the flavor of your stew with green onions.
- Celery stalks – add extra savory flavor to your stew, you can use the leaves of the celery as well, if you don’t have fresh celery stalks, then you can add 1/4 teaspoon of celery seeds
- Red bell pepper – gives a sweet flavor to your stew.
- Carrots – also give a sweet flavor, if you are using organic carrots no need to peel them, just wash and chop.
- Fresh herbs -basil, oregano, thyme, rosemary are some of the chop herbs that you can add to flavor your potato stew.
- Vegan bouillon cubes – plus 4 cups water or 4 cups vegetable broth, I used Edwards and Sons Brand.
- Italian seasoning – adds more flavor. Use store-bought or Homemade Italian Seasoning.
- Onion powder, Garlic powder, Cayenne pepper – make your stew pop with these extra flavors.
Directions
- Heat olive oil in a large saucepan over medium-high. Add onion and cook until soft, about 2 minutes.
- Stir in garlic, green onion, bell pepper, celery, carrot, potato, and fresh herbs; cook for another minute, stirring constantly.
- Add vegan bouillon, vegetable broth, Italian seasoning, onion powder, garlic powder, and bring to a boil.
- Reduce heat to simmer until vegetables are tender, about 15 minutes or until the potatoes are tender.
- Add cayenne pepper and salt to taste.
- To thicken, mash some of the potato cubes or mix 1 tablespoon of cornstarch in 2 tablespoons of cold water and add to the stew, constantly stirring until it thickens.
