  • Avocado oil – or your favorite oil, eliminate oil and saute vegetables with vegetable broth.
  • Onion – white, yellow onion, or shallots are great in the recipe.
  • Garlic – lends great flavor to the stew, you can use less or more to suit your tastebuds.
  • Celery stalks – add extra flavors to your stew with celery.
  • Potatoes – i used organic red-skinned or Yukon gold potatoes. 
  • Carrots – add a naturally sweet flavor to your stew, use organic carrots.
  • Italian Seasoning – Onion Powder, Garlic Powder, Smoked Paprika – this seasoning combination is flavorful.

  1. Over medium-high heat up the oil in a large saucepan
  2. Add onion and cook until soft, about 2 minutes.
  3. Stir in garlic, and celery and cook until fragrant, about 1 minute.
  4. Add potatoes, carrots, Italian seasoning, onion powder, garlic powder, smoked paprika, bouillon cubes, and water.
  5. Cover the saucepan and bring it to a boil. Reduce the heat to simmer.
