The term “leftover” is usually taken as a negative connotation. However, the significance of leftovers became clear to me when I was on my own, both from a financial and creative perspective!

An excellent test for a home cook is to make something new and delicious out of something they’ve already prepared. Many of the world’s most beloved dishes got their start as a means to cover and extend leftovers. Making use of leftover rice is tricky because it doesn’t reheat nicely. However, making fried rice from leftover rice is a great way to use it up.

Fried rice, like many other meals that evolved from leftovers, must be made with leftovers. To keep the rice from sticking to the pan, start with cooked, cold rice on the drier side. Fried rice is the ideal method to use leftover rice, vegetables, and meat. Although it has been for centuries, it remains as important to kitchens then as it ever was.

For those of us who end the Thanksgiving festivities with an abundance of meals, it’s never too early for us to start thinking about what we’ll do with all the leftovers. Leftover lentil meatballs are great with fried rice. I like to use lentil meatballs in fried rice since it is a very adaptable protein that absorbs amazing Asian flavors.

If you’ve ever thought about what to do with leftover Thanksgiving lentil meatballs, I’ll show you how to make the tastiest “leftovers” fried rice.

How to Make Leftover Thanksgiving Fried Rice?

For making Leftover Thanksgiving Fried Rice, you’ll require leftover Thanksgiving lentil meatballs and the following additional ingredients: 

Ingredients

  • Leftover Thanksgiving Lentil Meatballs cut into bite-sized pieces
  • 2 tablespoons avocado oil
  • 1/2 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup bell peppers, chopped
  • 2 medium carrot, diced
  • 3 tablespoons Bragg liquid aminos
  • 3 cups cooked brown rice
  • 1 cup frozen green peas
  • 1 teaspoon sesame oil
  • 2 green onions, chopped

Directions

  1. Heat oil in a large skillet over medium-high heat. Add onions and saute until soft.
  2. Stir in garlic and cook for 30 seconds. Add bell peppers and cook for a minute.
  3. Stir in carrots, lentil meatballs, frozen peas, and cook for another 2 minutes. Keep stirring.
  4. Add Bragg’s liquid aminos and stir to coat vegetables fully.
  5. Add rice and stir until fully combined and heated for about 2 minutes.
  6. Turn off the stove and stir in sesame oil and green onions. Serve immediately.

Serving Suggestions

You can serve this fried rice with different foods, but my favorite combination is soup or curry. Unusual, but I like it.

Storage Suggestions

Do you need to refrigerate or freeze? Simply split them out, store them in airtight containers, and throw them in. It lasts up to 5 days in the fridge! When you’re ready to eat, microwave them.

However, because this fried rice just takes 15 minutes to prepare, I recommend cooking it fresh whenever feasible.

Recipe Notes

  • This recipe is highly versatile – I’ve used the vegetables I had available, but you can add almost any veggie you have.
  • Fresh veggies should be cooked for at least 2 minutes (and thoroughly washed before chopping), but frozen vegetables require less time.
  • If you want to experiment with other seasonings, go for it!
  • Fried rice with leftover rice is the best. Because the cooked rice dries up a little as it stays in the fridge. The grains then separate beautifully. This creates the ideal environment for preparing a wonderful fried rice meal.
  • To make this meal healthier, I used brown rice rather than white rice. However, you can use your leftover white rice.

Recipe Variations 

The possibilities are endless when we make homemade fried rice changes, therefore, be creative and utilize any leftover items. Nonetheless, here are some ideas:

Pineapple fried rice: Fresh pineapple is a traditional ingredient in Chinese cuisine and Thai fried rice. To incorporate it, simply cut it and whisk it in.

Fried Rice with Vegetables: Any vegetable that is suitable for stir-frying would be nice in fried rice! Simply sauté and stir in the fried rice until everything is well combined.

Fried Quinoa with Kimchi: Kimchi gives fried rice a big flavor lift. Simply chop the kimchi and toss it into the quinoa to prepare kimchi quinoa fried rice.
