Vegan Cilantro Lime Dressing
Hello, my friends, this is Michelle, I took a little over a week off from blogging and I missed you all. I spent some quality time with family, got a lot of personal business done, helped my daughter Devannah as she gets ready to go back to University, helped her photographed some of the recipes for our cookbook. One of the recipes that I made for my hubby was this easy cilantro lime dressing, it was a hit served with salad.
There are hardly any store-bought salad dressings that can compare to homemade versions, nothing beats the fresh-tasting ingredients. This creamy cilantro lime dressing is loaded with fresh lime, garlic, and cilantro it will definitely boost the taste of any salad.
It is similar to the dressing on my Vegan Southwestern Salad with Avocado Dressing Recipe, except this time I didn’t add the avocado.

Ingredients For Cilantro Lime Dressing
This dressing has a simple ingredient list but you shouldn’t bet fooled by it, it has just the right balance of flavors.
Cashews – I used cashews because they are creamy and have a neutral-tasting flavor, you can substitute with sunflower seeds for a nut-free version. If you are allergic to cashews then substitute with blanched almonds and blend until smooth and creamy using a high-speed blender. You must use a high-speed blender when using almonds or else your salad dressing will turn out gritty.
Garlic – add to boost the flavor and its so good for the immune system.
Lime – great for its zesty flavor.
Salt – for a boost of flavor I used Himalayan Pink Salt.
Cilantro – this fresh cilantro also know as coriander is sold at most supermarkets, Latino, West Indian and Indian grocery stores in bunches. Keep fresh bunch of cilantro in the refrigerator for 7-10 days.
How To Make Vegan Cilantro Lime Dressing?
- Place cashews, water, garlic, lime, salt and cilantro in a high-speed blender and process until smooth creamy.
- Pour salad dressing in a sealed container and store in the refrigerator.
How Long Does Cilantro Lime Dressing Last?
Homemade cilantro lime dressing lasts for about 5-7 days refrigerated but our family usually eats it before then.
