This flavorful Vegan Eggplant Parmesan is the dairy-free version of the classic Italian eggplant parmesan., made with baked eggplant cutlets, vegan cheese, and tomato sauce.

Vegan Eggplant Parmesan

The Eggplant slices are dipped in a seasoned batter and baked until crisp. They are layered with tomato basil tomato sauce, creamy cashew cheese sauce and vegan Parmesan, baked to perfection for a perfect comfort dish. 

What Is Eggplant Parmesan?

Eggplant Parmesan also called Parmigiana Di Melanzane is an Italian casserole like lasagna., made with eggplant slices that are used to replace the noodles in lasagna. The eggplant slices are layered with tomato sauce, and cheese.

Is Eggplant Parmesan Healthy?

My Vegan Eggplant Parmesan recipe is made with baked eggplant cutlets and an oil-free vegan cheese sauce. It is cholesterol free and a much healthier and delicious alternative to the traditional version. 

Eggplant by itself is a low-calorie fruit, it is high in manganese and fiber. 

Do You Peel Eggplant?

Peeling the skin off your eggplant is totally optional, the skin is edible and contains a lot of antioxidants including anthocyanins. yet it can be tougher in large mature eggplants. It is best to choose young eggplant that is firm to touch with glossy skin

How To Make Vegan Eggplant Parmesan?

Prepare Eggplant

  1. Wash eggplant and dry with a towel. Cut off the stem of the eggplant, Slice eggplant into 1/4 inch slices. At this point, you may add eggplant slices to a bowl and sprinkle with salt and allow the eggplant to sweat for 20 minutes. Rinse eggplant slices to remove salt and pat with a clean dishcloth or paper towel and set aside. Salting of the eggplant slices is believed to be important to remove the bitter taste but I have done it without salting and the eggplant Parmesan didn't taste bitter.
  2. Preheat oven 425 degrees Fahrenheit, Line a baking sheet with parchment paper and lightly spray or brush with oil. In a bowl, combine brown rice flour, nutritional yeast flakes, onion powder, garlic powder, paprika, Italian seasoning, and salt. Add water and mix to form a batter, like a pancake batter. 
  3. Dip each eggplant slice in the batter, make sure to coat both sides, place the slices on the baking sheet in a single layer. Bake for 30 minutes turning halfway. Meanwhile, prepare the vegan cheese. 

Prepare The Vegan Cheese

  1. Place cashews, nutritional yeast flakes, tapioca starch, lemon juice, onion powder, garlic powder, salt and water in a high-speed blender. 
  2. Process until the sauce is creamy. Set aside.

To Assemble

  1. Brush a 9x13 casserole dish with oil or use cooking spray. Spread 1/2 cup tomato sauce at the bottom at the base of the casserole dish. 
  2. Top the eggplant slices with 3/4 cup tomato sauce and 1/2 of the cheese sauce. 
  3. Place the remaining eggplant slices on top, followed by the remaining tomato sauce and cheese sauce.
  4. Sprinkle V on top. Bake for 30 minutes until golden. 
  5. Garnish with chopped basil and serve.

Yes, you can freeze your eggplant Parmesan, however, make sure to thaw casserole pan completely.
