Instant Pot Black Beans
The simplest way to eat black beans is when they are cooked alone with some seasonings. I love using my instant pot, so that I can used bagged beans without needing to soak them overnight.
There are so many advantages of making your own black beans from scratch using a pressure cooker. It is more cost-effective. A one-pound bag of beans costs less than $2 here in the USA, one-pound bag of black beans is the same as about 2 cups of dried black beans, this makes 12 servings of cooked beans.
You know how some canned beans have preservatives as ingredients on the label. well, no need for added preservatives when you cook your beans from scratch in the Instant Pot.

I bought some tender collard greens at a local health food store, they were so fresh and vibrant. I decided to add some at the end of this delicious black bean and butternut squash stew.

I made these delicious black bean enchiladas for lunch today. They were easy to prepare because I had most of the ingredients on hand. One thing I didn’t have was prepared enchilada sauce. However, I had regular tomato sauce, so I decided to make my own version of it.
I actually loved it and you couldn’t tell the difference. You can make your own and increase the amount of cumin and oregano. Personally, I don’t like a strong cumin taste in my recipes, so I’m usually gentle with the amount I use. Also, I don’t like chili powder, so I didn’t use it. Instead, I substituted it with cayenne pepper.
