Last weekend my hubby and I went to an organic strawberry farm near me to pick the last strawberries of the season. Here in Florida, the "winter strawberry capital of the world", strawberry season is over for us while it is just beginning in California and other parts of the USA.

For this easy strawberry pie, the filling is so simple to prepare. I decided to thicken it with cornstarch, crushed strawberries, sugar, and water. The natural flavor of the sweet strawberries was able to pop! This was the best strawberry pie I have had. My entire family enjoyed it, so it didn't last very long at all.

How Much Is A Quart of Strawberries?

A quart of strawberries can vary based on the size of the strawberries since a quart is measured by volume. A quart of small strawberries will actually weigh more than a quart of large ones.  The weight can be anywhere from 1 1/2 pounds to 2 1/2 pounds. Here is a handy cooking conversion chart

How To Make Strawberry Pie?

  1. Bake pie crust using one of my recipes or your favorite, and cool completely. In a saucepan, add 2 cups of strawberries, crush with a potato masher, add sugar, salt and bring to a boil on medium heat.
  2. In a small bowl, mix water and cornstarch. Add the cornstarch slurry to the saucepan, stirring until mixture thickens in about 5 minutes. Allow strawberry sauce to cool.
  3. Arrange remaining strawberries at the base of the baked pie crust. Pour the strawberry sauce over the strawberries and chill for about 2 hours.
  4. Top strawberry pie with vegan whipped cream and serve.

Should Strawberry Pie Be Refrigerated?

Typically fruit pies can be left out at room temperature but because this strawberry pie is garnished with coconut whipped cream it will need to be refrigerated. It will keep covered in the refrigerator for 3 days.

Can You Freeze Strawberry Pie?

Yes, you can freeze the strawberry pie stored in a freezer container for up to 2 months. 

Tips For Making Strawberry Pie

  1. Adjust sweetness according to how sweet your strawberries are. You can also substitute with coconut sugar, maple syrup, or 1 dropper full of stevia. 
  2. Substitute cornstarch with tapioca or arrowroot starch.
  3. You can find store-bought coconut whipped cream, brands like Cocowhip are available in the health food store and some grocery stores, and you can also try homemade Coconut Whipped Cream or Cashew Cream with 2 tablespoons sweetener added.
