You know that I love to cook, and I greatly love trying new things! I’m always looking for fun, delicious recipes that you can whip up in a flash. Well, this “Gluten-Free Vegan Sausage” is one that I think you’ll love. 

These sausages are SO delicious. They’re gluten-free and vegan—and, if you haven’t already guessed it—they taste just like regular sausage!

This Gluten-Free Vegan Sausage recipe is made from the finest, locally sourced ingredients. But it doesn’t stop there.

I want you to feel great every time you eat a meal—and that means sticking to your diet but also enjoying every bite you take. And the best part of these vegan sausages is that they’re so much healthier than regular sausages. They don’t pack on the calories, and they have vitamins and nutrients that aren’t in regular meat sausages.

Why Should You Make Your Own Sausage?

I liked store-bought vegan sausages when I was vegan but not gluten-free. It’s a real struggle to find gluten-free sausage alternatives. SO MANY contain gluten, which leaves me in the lurch due to my gluten intolerance. So I decided to roll up my sleeves and give it a try!

Many vegan sausages sold in stores contain vital wheat gluten. By making your own, you have complete control over the ingredients. You can customize it to meet your dietary requirements as well as your personal taste preferences by adjusting the spices. There’s no reason to buy it again because it’s so simple to make!

These sausages are vegan, gluten-free, and sugar-free. They are the perfect homemade sausages and are alternatives to the Beyond Meat Sausage. Gluten-Free Vegan Sausage

This week I will be teaching cooking classes, so as I was going through My Cookbook and deciding what recipes to prepare. I found my breakfast sausage recipe, which really caught my attention. I decided to make an updated version by adding extra spices and wrapping the sausage with rice paper, which took these sausages to another level.

I had tried to order some vegan sausage casing online but couldn’t find any, so I decided to find an alternative. I found that rice paper, traditionally used for making spring rolls, works perfectly as a casing for homemade sausage.

The idea for using rice paper as a casing came from Rice paper can be found at Asian supermarkets, grocery stores, health food stores, or on Amazon.

How To Make Gluten-Free Vegan Sausage?

This recipe meets all of the requirements for a hearty, healthy, and flavorful vegan sausage, in my opinion! It’s amazing what a few walnuts, onions, and seasonings could do for a meatless sausage.

Furthermore, unlike most other vegan recipes, this one does not contain wheat gluten (seitan). This makes it completely safe for gluten-free individuals!

With this recipe, you can adjust the seasonings to suit your own preferences and even substitute different ingredients based on your dietary requirements (such as replacing the seeds for nuts). Do you want spicier or smokier sausages? – It’s no problem!

To make these gluten-free and vegan sausages, you just need to follow the following steps:

  1. Add water to a medium non-stick saucepan. Add Bragg’s Liquid Aminos, nutritional yeast flakes, Italian seasoning, onion powder, garlic powder, fennel seeds, sage, salt, cumin, cayenne pepper, salt, allspice, aniseed, maple syrup, and sesame oil. Bring to a boil.
  2. Stir in walnuts and rolled oats, reduce heat, and stir to combine fully. Stir until oatmeal begins to soften, after about 2-3 minutes.
  3. Remove from the heat and allow it to cool until you are able to handle it with your hands.
  4. Roll mixture into sausage logs, and set aside on parchment paper or a ceramic plate.
  5. Dip each rice paper in a bowl of warm water until soft, being careful not to soak too long because it will start to tear.
  6. Fold the soaked rice paper over the sausage, twisting both ends and folding them under. Repeat until all mixture is used up.
  7. Heat oil in a large skillet on medium-high heat. Add sausages and cook until golden brown; turn on sides to make sure sausage is cooked evenly for about 8-10 minutes.
  8. You can also sauté slices of onions to serve with your sausages.

Tips For Making Vegan Sausage

  1. Make sure your filling is not too watery. It should look soft and doughy.
  2. Pay attention to the measurements. The recipe will provide a “meatless” sausage with the right consistency.
  3. You can do any spice combination you choose.
  4. Don’t be alarmed about the amount that I used; they were the perfect spice blend to give that great sausage taste that is found in traditional sausages.
  5. You can omit the rice paper if you don’t have or can’t access it, and just lightly fry your sausages until golden brown.
  6. The rice paper wrappers should only be soaked long enough to soften them and allow the excess water to evaporate. If you soak it too long, it will become sticky and won’t cook properly.
  7. A good length for the sausage will be 4 1/2 to 5 inches long so that it can be wrapped and cooked evenly.
  8. Make sure to use a non-stick saucepan to prevent the sausage mixture from sticking to the base of the pan. I used a ceramic/titanium pan.
  9. To cool the sausage mixture faster, transfer it to a shallow pan.
  10. Cook on a low heat setting. It will stick to a hot pan or grill.
  11. When cooking, turn them slowly and carefully to avoid ripping the casing.
  12. Rather than making a paste out of the mixture, keep it crumbled for a more interesting texture.

Gluten-Free Vegan Sausage’s Ingredients Variations

  • Vegan butter can be used in place of the oil.
  • You can add whatever vegetables you want.
  • You may use or leave out any spices or herbs you desire. You could even season it with poultry or Italian seasoning.
  • You can substitute any other sweetener for the maple syrup or leave it out entirely.
  • A vegan beef-style broth can also be used in place of the hot water for extra flavor. If you do, keep the liquid aminos/soy sauce to a maximum of 1 tbsp in order to keep it from becoming overly salty.

Serving and Using Options For Gluten-Free Vegan Sausage

This recipe pairs well with simple dishes such as

I think it would be great on a breakfast sandwich, too, with either a vegan scrambled egg or a fried egg. Basically, the possibilities are limitless.

You could also prepare a vegan casserole dish or slice and serve it on top of pizza or other salads and pasta dishes.

Yes! On the grill, these sausages are fantastic! Simply brush them with oil prior to grilling to prevent them from sticking to the grate. Grill them for 7-10 minutes on medium-low heat, depending on the temperature of your grill.

How Do I Make Various Vegan Sausages?

To make a variety of vegan sausages, start with the same basic sausage filling recipe and change the seasonings as needed (see variation section above).

How Do I Keep Gluten-Free Vegan Sausage That I’ve Made at Home?

I recommend keeping only what you will use in the next week or less in the fridge. After cooking a portion, freeze the remainder.

If you’re going to freeze a batch, undercook them slightly.

Then simply remove what you require for a single meal and cook it until thoroughly warmed.

Can I Freeze Gluten Free And Vegan Sausages?

Yes, I’ve done it with this recipe, and it’s fantastic! Let cool the sausages completely, and then freeze them in a freezer-safe Ziploc bag or container. After letting the frozen sausages thaw for a few hours at room temperature, you’re ready to grill/cook/roast/whatever! They look brand new!

What Makes Gluten-Free Sausages Unique?

Gluten-free sausage is made without the use of gluten-containing ingredients. Gluten is commonly found in processed foods, including sausages, so those with gluten sensitivities should look for and select gluten-free sausage.

  • 2 cups water
  • 1/4 cup Bragg’s liquid aminos or Tamari extra for brushing sausages
  • 2 tablespoons nutritional yeast flakes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon fennel seeds crushed
  • 1/2 teaspoon rubbed sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon Cayenne pepper ground
  • 1/4 teaspoon allspice optional
  • 1/4 teaspoon anise seed optional
  • 1 teaspoon maple syrup
  • 1/2 teaspoon sesame oil
  • 1/3 cup ground walnut
  • 1/4 cup oat flour or all-purpose gluten-free flour
  • 2 cups certified gluten-free rolled oats
  • Rice paper
  • oil for frying (I used avocado oil)


  • Add water to a medium non-stick saucepan, and add Bragg’s Liquid Aminos, nutritional yeast flakes, Italian seasoning, onion powder, garlic powder, fennel seeds, sage, salt, cumin, cayenne pepper, salt, allspice, aniseed, maple syrup, and sesame oil. Bring to a boil.
  • Stir in walnuts, oat flour and rolled oats, reduce heat and continue to stir to fully combine. Stir until oatmeal begins to soften, after about 2-3 minutes.

    These were fabulous in flavor. The rice paper skins are genius! I did read that you said make them doughy and thought I had made mine doughy enough but next time I will make them stiffer.
